Baby it's Cold Outside

When the temps drop, time to heat it up in the kitchen.  Tonight I decided to do just such with a pot of Gumbo


I used a variation of this recipe.  Adding crabs and leaving out the okra.  Serving with a some brown rice #goodeats

Turkey Burgers and Sweet Potatoe French Fries

A few years ago I met up with my friend Yalonda for lunch at a local burger place. Not your typical burgers and fries. They had the standard beef burgers, but they also had chicken burgers, bison burgers, and turkey burgers.


I ordered the turkey burger which was served with pesto and provolone cheese, and fell in love. Since then I've played around with my own turkey burger recipe to try to recreate the dish I had that day. This is what it has evolved into.



Gourmet Turkey Burger with Pepper Jack Cheese and Pesto Mayonnaise

1 pound ground turkey
1 egg, lightly beaten
2 tablespoons seasoned bread crumbs
1 tablespoon finely diced onion
½ tablespoon chopped fresh parsley
1 clove garlic, peeled and minced
1/8 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper


1. In a large bowl, mix ground turkey, bread crumbs, egg whites, onion, parsley, garlic, salt, and pepper. Form into 4 patties.

2. Cook the patties in a skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C).

Serve on whole wheat hamburger buns, with lettuce, tomato, pepper jack cheese, and pickles.
To make pesto mayonnaise, mix together one part prepared pesto with one part mayo.


Sweet Potato Fries

4 sweet potatoes cut into large French fries
2 tablespoons butter
½ teaspoon brown sugar
Cajun seasoning to taste

1. Bring a large pot of water to a boil. Add cut sweet potatoes, and boil for about 4 minutes. Remove from water, and drain.

2. Melt butter in a large frying pan over medium heat. Stir in brown sugar until dissolved, adding more butter if necessary. Add sweet potatoes, and fry until golden brown and fork tender, turning occasionally. Remove and sprinkle with Cajun seasoning. Serve hot.
